1 box NOMU MiniMakes Spiced Cake Batter Mix
2 large eggs
1/4 cup (60ml) oil
1/4 cup (60ml) milk
3 ripe bananas, peeled and mashed
250g dates, pitted, chopped and softened in 1/2 cup boiling water and 1/2 tsp bicarbonate of soda
Sliced banana, to decorate
Preheat the oven to 180°C and line a small loaf tin with baking paper.
Prepare the NOMU Spiced Cake Batter as per the box directions. Add the mashed bananas and dates and stir until combined.
Spoon into the prepared loaf tin and top with slices of bananas on top. Bake at 160°C for 40 min or until cooked when tested with a skewer. Make sure your oven isn’t too hot or the bread will split on top.
Allow to cool slightly, then slice and serve.
