1 box NOMU MiniMakes Vanilla Cake Batter Mix
5 grams instant yeast
1 tbsp aniseed
1 1/2 tsp ground ginger
1 tsp ground cinnamon
3/4 tsp mixed spice
1/4 tsp ground cardamom
Zest of an orange
1/2 cup lukewarm water
1/4 cup lukewarm milk
1 tablespoon melted butter or oil
1 1/4 cups all purpose flour
Vegetable oil, for frying
Desiccated coconut, to sprinkle over the finished cones
Sugar syrup:
1 1/2 cup sugar
1 1/2 cup water
1 whole cinnamon stick
Squeeze of lemon juice
Place the cake mix, yeast, spices and orange zest into a bowl and give it a quick whisk. Mix in the wet ingredients. Add 1 cup of all-purpose flour and knead for 2-3 minutes to form a dough. If the dough is very sticky, add the remaining 1/4 cup of flour.
Cover the dough and let it rise for an hour.
Fill a pot with enough oil for deep frying and place over medium-high heat.
Divide the dough into 8 equal pieces. Oil your hands lightly and roll each piece about 75-80cm long between your hands. Wrap around a foil/metal cone and deep fry until golden brown on each side. The oil is ready when it reaches 160°C or when tiny bubbles immediately form when putting a wooden spoon in the oil.
Place the fried Koesister cones on paper towel to drain the excess oil. Don’t forget to remove the foil/metal cone after frying.
Boil the syrup ingredients for 15-20 minutes until translucent and sticky. Coat the cones in syrup with the help of a brush or spoon. Sprinkle as much desiccated coconut as your heart desires and serve with ice cream!
