Cookies:
180g NOMU MiniMakes Spiced Cake Batter Mix
85g unsalted butter, softened
1 large egg
2-3 tbsp all-purpose flour (if needed, to adjust consistency)
50g chopped nuts or dried fruits (optional, for added texture)
1/4 cup carrots, grated
Filling:
1/2 tub cream cheese
200g icing sugar
Orange food colour (optional)
Preheat your oven to 180°C. Line a baking sheet with parchment paper.
Mix the cream cheese and icing sugar until well combined. Freeze until needed.
In a large bowl, cream the softened butter until smooth. Add the spiced cake mix and mix until well combined. Beat in the egg until the mixture is smooth and uniform.
If the dough is too sticky, gradually add 2-3 tablespoons of all-purpose flour until you reach a slightly firm but still pliable dough. The dough should hold its shape when scooped.
If you like, fold in chopped nuts, carrots or dried fruits for added texture and flavour.
Scoop tablespoons of dough and place a blob of the frozen cream cheese mixture in the middle and cover. Place onto the prepared baking sheet, spacing them about 2 inches (5cm) apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centres may still look a bit soft, but they will firm up as they cool.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
