1 box NOMU MiniMakes Vanilla Blondie Batter Mix
60g butter, melted and slightly cooled
1 large egg
1 tsp ground cinnamon (optional)
2 Tablespoons cinnamon sugar
Your favourite ice cream, to serve
Preheat your oven to 160°C fan and line a 21 x 11cm loaf tin with baking paper.
Pop the butter into the microwave until melted but not HOT. Whisk in the sugar mix (sachet 1) until it makes a nice sugar scrub texture. Add in your egg and whisk to combine. Add in the blondie mix (sachet 2) and stir to form a thick batter. I always add a teaspoon of cinnamon into the batter too!
Spoon the batter into your lined baking tin and sprinkle the cinnamon sugar mix on top – this will form a lovely crust in the oven.
Bake for 20-25 mins depending on your oven. I prefer my blondies slightly chewy and I like to see a tiny bit of moist batter on the knife when I check it while baking.
Allow to cool for at least 15 minutes to firm up, then cut into equal blondie bars or a large one just for you (I won’t tell anyone).
Top with a scoop of ice cream and enjoy x
