1 box NOMU MiniMakes Chocolate Brownie Batter Mix
60g unsalted butter, melted
2 large eggs
2 tbsp coffee
For the topping:
Marshmallows, cut in half
½ cup chocolate, melted
Preheat oven to 170°C (or 160°C with fan) and line an 18 x 18cm square baking tin with baking paper.
For the brownies, mix the sugar (sachet 1) and melted butter until combined, then whisk in the eggs. Fold the brownie mix (sachet 2) and coffee into the wet ingredients to form a smooth batter.
Spread the batter into the prepared baking tin and bake for 18-20 minutes. Bake longer if you don’t want it to be too gooey. Remove the brownies from the oven and leave to cool.
For the topping, place the marshmallows in a layer on top of the brownies and heat in the microwave until they have slightly puffed (NB make sure to remove the brownies from the metal tin first! You could also use your oven for this step). Slowly pour the melted chocolate over the marshmallows and allow to set.
Once set cut into slices and enjoy!
