1 box NOMU MiniMakes Vanilla Cookie Dough Mix
90g softened butter
1 large egg yolk
2/3 cup apricot jam
Prepare the cookie dough as per the package instructions – do not chill.
Spray a 20 x 20cm baking tray and line with baking paper.
Divide the dough in half. Place one portion in the freezer and press the other half into the base of the prepared baking tray. Spread the jam in an even layer on top.
Take the dough out from the freezer (it should be hard) and grate evenly over the jam to create a crumbly topping.
Bake until golden and cut into fingers.
