1 box NOMU MiniMakes Vanilla Cookie Dough Mix
60g butter, melted and cooled
1 large egg
1 tsp ground cinnamon
3/4 tsp mixed spice
2 tablespoons orange zest
50g raisins, roughly chopped
Icing:
1/4 cup icing sugar
A tiny bit of milk to form a thick icing
Mix the sugar sachet with the cooled melted butter. Add egg and whisk well to combine. Add in the spices, zest, raisins and cookie mix and mix well to form a dough.
Refrigerate for 1 hour minimum.
When ready to bake, preheat your oven to 160°C and line a baking tray with baking paper.
Divide the dough into 12 equal balls. Place them 5cm apart on the prepared tray and press down gently using the base of a glass. Bake for 10-12 minutes, then place on a wire rack to cool.
For the icing, add a little milk at a time to the icing sugar, about half a teaspoon, until it reaches a thick, spreadable consistency. Decorate the baked cookies with a cross of icing or drizzle over if preferred and enjoy.
