Cookie topping:
1 box NOMU minimakes Vanilla Cookie Dough Mix
60g unsalted butter, melted and cooled
1 large egg
Hazelnut fudge layer:
15g softened butter
65g hazelnut butter
85g condensed milk
Oatmeal base:
170g sugar
1 large egg
1 tsp vanilla extract
115g softened butter
155g flour
1/2 tsp baking powder
1/4 tsp salt
120g oats
To decorate:
100g white chocolate pieces
Preheat the oven to 180°C and line a large square baking dish or cake tin with baking paper.
Prepare the NOMU minimakes Vanilla Cookie Dough Mix as per the packet instructions. Set aside.
Make the hazelnut fudge layer by placing 15g butter, hazelnut butter and condensed milk in a heat-proof mixing bowl and microwave for about 1 minute, stirring every 30 seconds until everything is melted and combined. Set aside.
Place the sugar, egg, vanilla extra and 115g butter in a mixing bowl. Mix using a hand-held mixer until thick and creamy. Add the flour, baking powder, salt and oats, then mix until it just comes together to form a soft dough.
Spread the oatmeal dough mixture into the bottom of the prepared baking dish, then spread the hazelnut fudge mixture evenly on top. Dollop random spoonfuls of the NOMU minimakes Vanilla Cookie Dough on top of the hazelnut fudge layer and then dot with the white chocolate pieces to finish.
Bake for 30 minutes until golden, then remove from the oven and allow to cool completely (preferably overnight) before slicing into bars.
