Granadilla "cheesefake" vanilla blondies

Makes: 18 blondie bites

1 box NOMU MiniMakes Vanilla Blondie Batter Mix
60g butter, melted and cooled
1 large egg
 
Icing:
120g unsalted butter, softened
220g cream cheese
1 teaspoon vanilla extract
4 cups icing sugar
3 tbsp granadilla pulp, plus extra to decorate
 
For the blondies:
1. Preheat the oven to 170°C and line a small deep baking tray with baking paper.
2. Whisk the egg and melted butter in a mixing bowl.
3. Add the sugar sachet from the MiniMakes box and whisk until combined.
4. Add the flour mix from the MiniMakes box and combine to form a smooth batter.
5. Transfer the batter to the prepared pan and bake for 20-25 minutes. Remove and let the blondies cool on a wire rack.
 
For the icing:
6. Whisk the softened butter with an electric mixer on medium speed until silky.
7. Add the cream cheese and continue whisking until smooth.
8. Slowly add the icing sugar one cup at a time to form a smooth icing, then mix in 3 tbsp granadilla pulp.
 
For decorating:
9. Spread the cream cheese buttercream on top of the cooled blondie, and decorate with extra granadilla pulp on top.
10. Cut as desired and enjoy!
