For the batter:
1 box NOMU MiniMakes Chocolate Cake Batter Mix
2 large eggs
⅓ cup vegetable oil
½ cup warm milk
½ cup chopped pecan nuts, plus extra to decorate
80g white chocolate chips
For the espresso cream cheese frosting:
120g butter, softened
250g plain cream cheese
500g icing sugar, sifted
2 tbsp instant espresso powder
1 tbsp vanilla essence
Preheat oven to 150 degrees on fan function, and grease and line muffin tray with 12 paper liners.
Whisk the eggs until foamy, then whisk in the oil and milk. Add the MiniMakes cake mix and mix thoroughly to form a smooth batter. Add the pecan nuts and choc chips.
Pour the batter into the muffin tray and bake for 20 minutes or until skewer comes out dry and clean. Set aside to cool.
Beat together the butter and cream cheese until smooth. Sift in the icing sugar and espresso powder, add the vanilla essence and mix until combined.
Ice the cupcakes once cooled and decorate with extra pecan nuts.
