1 cup Medjool dates chopped
1/4 cup hot water
1 tsp bicarbonate of soda
100g soft butter
3 Tbs Milo powder (optional)
1 egg
1 cup desiccated coconut
1 box NOMU MiniMake Chocolate Cake Batter Mix
Melted chocolate, for sandwiching the cookies
Preheat the oven to 180°C. Spray and line a baking tray with baking paper.
Place the chopped dates, hot water and bicarbonate of soda in a bowl and leave for 5min to soften. I used a stick blender to blend it into a puree. Set aside.
In a mixing bowl, mix together the soft butter and Milo. Add the egg and mix well, then add the date puree. Add the coconut and the cake mix and combine to form a dough.
Roll the dough into balls and place on the prepared tray.
Bake for 10min, open the oven door and flatten biscuits just a bit, then bake for another 10min. Leave to cool completely.
Sandwich the biscuits together with melted chocolate.
