1 box NOMU MiniMakes Spiced Cake Batter Mix
2 large eggs
1/4 cup (60ml) melted butter
1/4 cup (60ml) milk
60 g chopped chocolate
40 g chopped dried ginger chunks
Melt and cook the butter in a pan until browned. (This adds a nutty flavour). Pour into a bowl to stop the cooking process and set aside to cool.
Whisk the eggs, milk and brown butter together. Add the cake mix and stir to combine. Add the chocolate and ginger chunks and mix through the batter.
Prepare a madeleine tin (butter or spray) and place in the fridge together with the batter for 60 min.
Meanwhile, preheat your oven 190°C.
Spoon the batter into the madeleine cavities and bake for 7 – 10 min. Cool in the tin for 5 minutes, then transfer to a wire rack to cool.
