1 box NOMU MiniMakes Chocolate Cake Batter Mix
5 large eggs
1/4 cup cornstarch
Whipped cream, to fill
Melted chocolate, to decorate
Preheat your oven to 200°C.
Place all the eggs in the bowl of a stand mixer and whisk for 15min (yes 15min). Sift together the MiniMakes cake mix with the cornstarch. After 15min, add spoonfuls of dry ingredients to the egg mixture and mix until just combined. Don’t over-mix! Just make sure all dry ingredients are incorporated.
Spray a sheet pan with cooking spray and line with baking paper, then spray again.
Add the cake batter to the pan, level it out and bake for 10min at 200°C.
Take out of the oven, don’t let it cool completely. Trim off the edges, then cut the sheet of cake into 3 equal lengths.
Dampen 3 tea towels and roll each cake piece lengthways into a log. Allow to cool completely.
Whip your cream ( I didn’t add any sugar as the cake and chocolate is sweet enough). Unroll the cake logs, spread a thin layer of cream inside and then roll back up. Cut into smaller logs.
Drizzle over melted chocolate and serve!
