Cupcakes:
1 box NOMU MiniMakes Vanilla Cake Batter Mix
2 eggs
¼ cup oil
¼ cup cornflake milk (see Tips*)
Cornflake buttercream:
150g soft unsalted butter
330g icing sugar
4 tbsp cornflake milk
1 ½ tbsp Horlicks
For décor:
Chocolate vermicelli sprinkles
Cornflakes, lightly toasted in the oven until golden
Preheat your oven to 160˚C and prepare a cupcake tin with 12 paper liners.
In a mixing bowl, beat the eggs, then mix in the oil and cornflake milk*. Add the cake mix and mix together thoroughly to form a batter.
Pour the batter into the prepared cupcake tray and bake for 15-20 minutes or until a skewer comes out clean. Remove from the oven and allow to cool before icing.
For the icing, whip the butter until smooth. Add the icing sugar and mix until well combined. Add the cornflake milk and Horlicks and mix well.
Fit a piping bag with a piping nozzle of your choice and pipe a generous amount of icing onto the cupcakes. Coat one half of the cupcake with caramelized cornflakes and the other with sprinkles
*Tip: Prepare the cornflake milk by soaking cornflakes in some milk until soft. Strain and measure out what you need for the cookie dough and icing.
