For the cupcakes:
1 box NOMU MiniMakes Chocolate Cake Batter Mix
2 eggs
¼ cup oil
½ cup whiskey (optional, you can use milk instead or a mixture of both)
For the buttercream:
150g soft unsalted butter
330g icing sugar
2 tbsp cocoa powder
To decorate:
Chocolate shavings
Cherry dessert topping
Black cherries or cherries of choice
Preheat and Prepare:
Preheat your oven to 160˚C and prepare a cupcake tin with 12 paper liners.
Make the Cupcake Batter:
In a mixing bowl, beat the eggs, then mix in the oil and whiskey (or milk). Add the cake mix and mix thoroughly to form a smooth batter.
Pour the batter evenly into the prepared cupcake liners.
Bake the Cupcakes:
Bake for 15-20 minutes or until a skewer inserted into the centre comes out clean.
Remove from the oven and allow the cupcakes to cool completely before icing.
Prepare the Buttercream:
In a large bowl, whip the butter until smooth. Gradually add the icing sugar and cocoa powder, mixing until the buttercream is smooth and creamy.
Decorate the Cupcakes:
Fill a piping bag fitted with your favourite nozzle with the chocolate buttercream. Pipe a generous amount of buttercream onto each cooled cupcake.
Coat the bottom of the buttercream swirl with chocolate shavings. Add a spoonful of cherry dessert topping onto the top of the icing and finish with a fresh cherry.
