For the cookies
1. Place the cooled melted butter and sugar sachet found in the MiniMakes pack in a mixing bowl and whisk until combined
2. Add the egg and continue whisking until combined.
3. Add the flour mixture from the MiniMakes pack and combine to form a smooth dough.
4. Crush half a pack (200g) of tennis biscuits (or more depending on how crusty you want your cookies), then lightly mix into the dough. Cover and set aside in the fridge to chill.
For the filling:
5. Place the tin of condensed milk, milk/yoghurt and lime juice in a separate bowl and mix until combined.
6. Stir in the flour and the lime zest until smooth.
For baking:
7. Preheat your oven to 180°C and line a baking tray with baking paper.
8. Using your hands, form 60g of cookie dough into a ball and place on the prepared tray. Repeat the process with the rest of the dough.
9. Light press the middle of the cookies with a tablespoon to form a shallow cavity and add the filling.
10. Bake the cookies for about 10-12 minutes.
11. Remove from the oven and leave to cool on the tray. Garnish with some fresh lime zest and enjoy!
