90g unsalted butter, at room temperature
1 large egg
80g rainbow vermicelli sprinkles
9 rainbow twisted marshmallows
Preheat the oven to 160°C fan function and grease and line a baking tray.
Whisk together the softened butter and sugar (sachet 1), then mix in the egg until combined. Add the cookie mix (sachet 2) and combine to form a dough, then add in rainbow vermicelli (don’t over mix!).
Using a cookie scoop, take small portions of the dough at a time and press into a flat disc. Place one marshmallow in the center, pinch the dough together to completely enclose and roll into a ball.
Place the cookies onto the prepared tray and bake for about 15 minutes.
